The Fox and Fiddle parking lot and solar parking

If you have been to the River or Fox and Fiddle California you may have noticed the big green fenced off parking lot! It's really hard to miss the construction of the new solar parking that is coming to the river.

Let's rewind back to the first week in April. A short 6 weeks after the opening of the Fox and Fiddle California.

April 4th was a surprise to many who came to work and to dine at the River. A big green fence was taking up most of the accessible parking for Fox and Fiddle California. What was said to happen during one of the busiest months in the valley was solar covered parking. How was this going to work for us as a new brand that merely just opened? We were brand new in infancy stage and our parking lot is a construction mess! We tried to stay positive that solar covered parking will be great for the summer months and maybe bring more customers during the slow season to offset the impact it immediately had on the Fox.

Weeks were going by and the phone was ringing like mad from new guests asking how to get to us. While it seemed so easy and straight forward to go past all that fencing into the back lot it really wasn't for many. Complaints started rolling in from our guests who came for lunch and had to walk from the back lot. Many elderly we felt terrible for because it all seemed so confusing on navigating. As the months went by we realized we were passing the promised opening dates. The heat hit the desert and that extra confusing lot was something many wanted to avoid. We'd see locals at the grocery store and hear them tell us how they can't wait to come back when it's not a construction zone.

Going 3 months into the parking lot construction we were told and promised it was opening July 3. We cheered with our staff and started to plan a parking lot party! (We were bringing in a band that following Saturday to celebrate!) As the day approached we felt a sickness back again. Something wasn't right. There wasn't anyone working on the lot and it wasn't opening... scrambling to cancel our parking lot party. The band we had and staff we had scheduled it was sadness.

We've been chins up the best we can. We know many people are avoiding that lot. We are sorry for all the hope and hype with our guests to getting that solar parking for summer. Many say wait for the season and hopefully by then it shall open.

We are waiting... waiting with anticipation. Waiting to be able to operate with normal circumstances. We chose the location for the Fox on the parking lot side so you can have easy access to your local pub! The latest dates were are given was August 18th. When/if that happens we will celebrate!

Cheers to hoping we have that solar parking soon!

Vee was born in AZ and grew up in Carlsbad. She has 3 brothers, one of which she opened a successful coffee shop with for a few years with in her late 20's. At 17 years old Vee decided to come out and speak up to whom she was to the dismay of some people around her including family. Shipped off to a teen challenge rehab she has had to learn life the hard way. After leaving the rehab and trying to make it on her own, on and off the streets of LA, she landed herself a job at a floral shop called Studio Fiore. The floral shop had been known for over the top and celebrity events and eventually was picked up and shown on the TV show The Celebration with David Trutera. We call Vee the celebrity of the Fox since she was seen on a few seasons on WeTV.

We care about our meat!

One of the reasons we started this blog was to allow our customers to get to know us better. We want you to know we care about your food! have you ever wondered what is put in your hamburger patty? Or where it comes from?

We decided to take you on a tour to the meat factory we use. When opening the Fox & Fiddle California it was important to us to find a partner that was trustworthy, high quality, and believed in the same values as the Fox. Using the best quality products. This means no scary additives, extenders and properly raised beef.

Our hamburgers are are our own special grind of a meat to fat ratio that makes them juicy and super tasty! They are 8 ounce patties making our Fox double burger a pound of meat!

We will take you on a tour of West Coast Prime Meats!

High standards of safety and cleanliness. The sanitary scrub downs were very important in our tour.

The details that go into aging meat is so important. From lights to the perfect tempurature they have it done. Our steaks are perfect!

The individually packing of meat.

Factory sealed is a safer alternative to ordering bulk or purchasing at a local grocer then sealing in the restaurant. It's handled correctly and doesn't allow it to age the wrong way before vacuums packing.

A department that was one of the tightest run was the ground beef/hamburger. They only use the freshest meat that the customer requests for their grind. Packaged and sealed into packs of 5 for our restaurant means we don't have opened beef sitting for days. You get fresh burgers that are wonderful and served anyway you like! We recommend medium to medium rare!
